- 2 c. cornmeal
- 1 tsp. baking soda
- 1 tsp. salt
- 1 egg, beaten
- 1 1/2 c. buttermilk
Directions

1Combine first 3 ingredients in a medium bowl, mixing well. Combine egg and buttermilk, mixing well. Add to dry ingredients, stirring until batter is smooth.

2Place a well-greased cast-iron muffin pan in a 500° oven for 2 minutes or until very hot. Remove pan from oven; spoon batter into pan, filling 3/4 full.

3Bake at 500° for 9 to 10 minutes or until lightly browned.

4Yields 16 muffins.
