  • 1 1/2 cups all-purpose flour
  • 3/4 cup cornmeal
  • 1/4 cup granulated sugar
  • 1 Tbsp Magic Baking Powder
  • 1/4 tsp. salt
  • 1/4 cup butter or margarine
  • 1 egg, separated
  • 1/4 cup molasses
  • 3/4 cup milk

    GREASE large muffin tins or line with paper baking cups.

    MIX flour, cornmeal, sugar, baking powder and salt in a large bowl.

    Cut in butter until mixture is crumbly.

    WHISK together egg yolk and molasses; stir in milk.

    BEAT egg white until soft peaks form.

    STIR liquid mixture into dry ingredients, stirring just until moistened.

    Fold in beaten egg white.

    Spoon into muffin cups, filling 2/3 full.

    BAKE at 375F (190C) for 15 to 20 minutes or until firm to touch.

    Cool in pan 5 minutes; remove muffins and cool on racks.

    Store in airtight container.
