Ingredients
- 1 1/2 cups all-purpose flour
- 3/4 cup cornmeal
- 1/4 cup granulated sugar
- 1 Tbsp Magic Baking Powder
- 1/4 tsp. salt
- 1/4 cup butter or margarine
- 1 egg, separated
- 1/4 cup molasses
- 3/4 cup milk
Directions

1GREASE large muffin tins or line with paper baking cups.

2MIX flour, cornmeal, sugar, baking powder and salt in a large bowl.

3Cut in butter until mixture is crumbly.

4WHISK together egg yolk and molasses; stir in milk.

5BEAT egg white until soft peaks form.

6STIR liquid mixture into dry ingredients, stirring just until moistened.

7Fold in beaten egg white.

8Spoon into muffin cups, filling 2/3 full.

9BAKE at 375F (190C) for 15 to 20 minutes or until firm to touch.

10Cool in pan 5 minutes; remove muffins and cool on racks.

11Store in airtight container.
