Cornmeal Rolls(Harriet'S)

Ingredients

  • 2/3 c. cornmeal
  • 2 c. water
  • 1 cube butter or margarine
  • 3/4 c. sugar
  • 1 1/4 tsp. salt
  • 3 beaten eggs
  • 2 pkg. dry yeast dissolved in 1/2 c. warm water
  • 6 + c. flour

Directions

    Cook cornmeal and 2 cup water like mush (5 to 10 minutes). While still hot add butter or margarine, sugar and salt.

    When cool add eggs, yeast mixture and enough flour, as you knead, until stiff and does not stick to board.

    Let rise until double.

    Punch down; let rise.

    Form into rolls.

    Let rise again (3 rises).

    Bake at 350° for 20 to 25 minutes.
