Cornmeal Seafood Batter

  • 1 egg, beaten
  • 1/4 c. flour
  • 1/2 c. milk
  • 2 1/2 c. cornmeal
  • salt and pepper to taste

Directions

    Combine egg and flour. Beat in milk, salt and pepper. Whip to a smooth batter.

    Put cornmeal in a shallow pan.

    Set aside. Dip the fish into the batter, coating both sides.

    Place into the cornmeal and coat thoroughly.

    Shake off excess and fry to a golden brown.
