- 1 qt. milk
- 3 Tbsp. cornstarch (heaping)
- 3 eggs (room temperature)
- 1 1/2 c. vanilla
- 1 c. sugar
Directions

1Heat milk in top of double boiler, then stir in cornstarch which has been mixed with a little cold milk.

2Stir constantly until the mixture thickens.

3Then turn heat very low.

4Mix together egg yolks and sugar.

5Beat until very light.

6Combine this with cornstarch mixture.

7Cook thoroughly, stirring occasionally, so that it won't lump.

8Beat the egg whites stiff until they form peaks.

9Beat in a deep bowl.

10Pour the cornstarch mixture over the beaten egg whites.

11Cover the whites completely. Sprinkle vanilla over the top.

12Next, do not stir, fold the mixture.

13The heat of the cornstarch seems to partially cook the egg whites.

14Fold together gently until there are no more flecks of egg white visible.

15Let stand in a warm room until cool.
