- 1/4 c. margarine
- 1 large sweet onion, finely chopped
- 1 1/2 c. corn muffin mix
- 1 egg
- 1/3 c. milk
- 1 c. cream-style corn
- 1 c. sour cream
- 1/2 tsp. salt
- 1 c. shredded Cheddar cheese, divided
Directions

1In skillet, melt butter over medium heat.

2Saute onion until tender. Remove from heat and set aside.

3In bowl, combine muffin mix, egg, milk and corn.

4Spread into a greased 9-inch pan. Combine sour cream, salt and 1/2 Cheddar cheese and spread over batter.

5Sprinkle with remaining cheese.

6Bake at 425° for 30 minutes.

7Cut into squares; serve warm.
