- 8 cups water
- 2 cups dried black beans, rinsed well
- 1 large yellow onion, diced
- 3 garlic cloves, minced
- 1 tablespoon chile powder
- 1 tablespoon whole cumin seeds
- 1 tablespoon kosher salt
Directions

1In a large saucepan, combine all ingredients except salt.

2Over high heat, bring to a boil, then reduce to low, cover and let simmer for two and a half to three hours, stirring regularly and checking the water level.

3Add half the salt just as beans are beginning to soften.

4Cook until tender.

5Pour off excess water if needed.

6Taste and add more salt as needed.
