- 1/2 cup heavy cream

6Use a cheesecloth or fine colander to strain the curd.

8Rinse curd with water.

9Try to remove remaining moisture.

10Place into a bowl.

11Add heavy cream.

12Season with salt and pepper.

13NOTE: the curd will absorb the heavy cream.
