  • 1/2 gallon Milk
  • 6 tsp vinegar
  • 1/2 cup heavy cream

    Bring milk to simmer.

    Remove from heat.

    Add vinegar.

    Stir.

    Let sit for 15 - 20 minutes.

    Use a cheesecloth or fine colander to strain the curd.

    (liquid is called whey fyi)

    Rinse curd with water.

    Try to remove remaining moisture.

    Place into a bowl.

    Add heavy cream.

    Season with salt and pepper.

    NOTE: the curd will absorb the heavy cream.

    So make add much as you need.
