Cottage Cheese Balls

Ingredients

  • 1 c. cottage cheese
  • 1/2 c. chopped nuts (any kind; I use walnuts)
  • 1 c. bread crumbs
  • 4 eggs
  • 1 onion, chopped fine
  • salt to taste
  • 1/2 tsp. poultry seasoning
  • 1 tsp. sweet basil
  • 2 to 3 Tbsp. chopped parsley

    Mix all ingredients together.

    If mixture is too soft, more crumbs may be added.

    Form into balls about the size of a large walnut and drop into deep fat.

    Cook until they turn a deep, golden brown.

    At this stage, they may be stored in the freezer for future use or place in a shallow casserole; pour sauce over them and bake in medium oven for 1/2 hour.
