  • 4-oz. can whole green chiles
  • 12 corn tortillas
  • 1 c. sour cream
  • 12-oz. (1 1/2 cups) cottage cheese
  • 1/2 tsp. salt
  • dash pepper
  • 1/2 lb. sharp American cheese, cut into 12 strips
  • 15-oz. can enchilada sauce

Directions

    Drain chiles, remove seeds and cut into 12 strips.

    Cook tortillas according to package directions.

    Combine sour cream, cottage cheese, salt and pepper; reserve 1/2 c. of mixture.

    Spoon remaining on 12 tortillas.

    Top each with a strip of green chile and a strip of cheese.

    Place seam side down in casserole dish. Mix 1/2 cup reserved mixture with enchilada sauce and pour over top.

    Bake at 350 degrees for 25 to 30 minutes.
