Cottage Mashed Potatoes

  • 4 servings instant mashed potatoes or whipped potatoes
  • 1 1/2 Tbsp. instant minced onion
  • 1 c. large curd creamed cottage cheese

Directions

    Decreasing the water by 1/2 cup, prepare the potatoes according to package directions, but add the onion to the boiling water before adding the potatoes.

    With a fork, fold in the cottage cheese.

    Turn into a 1-quart casserole.

    Dot with butter. Sprinkle with paprika.

    Bake at 350° for 30 minutes or until lightly browned.
