  • 1 cup flour, plus
  • 2 tablespoons flour
  • 2 teaspoons baking powder
  • 14 teaspoon salt
  • 1 13 cups cottage cheese
  • 2 beaten eggs
  • 2 tablespoons vegetable oil
  • 2 teaspoons honey
  • 4 tablespoons sugar-free jam

    Mix dry ingredients.

    In separate bowl mix remaining ingredients (except for jam).

    Stir into dry ingredients just until moist.

    Spoon 1/2 of batter into greased muffin tins.

    Top each with one tsp jam.

    Fill each with remaining batter.

    Bake 400F 15-20 minutes.
