  • 1 tbsp oil
  • 1 large onion -chopped
  • 2 med carrots - chopped
  • 1.25lb ground beef
  • 14oz can toms
  • 290 ml beef stock
  • 1 bay leaf
  • 1 tsp thyme
  • 2 tbsp tom puree
  • s & p

Directions

    Preheat oven to 375F.

    Boil 1.25lb pototoes if making mash.

    Heat oil in large pan. Add onion and carrot and cook over medium heat for 5 mins until soft.

    Add beef and cook 3 mins until brown. Add toms, puree, beef stock, bay leaf & thyme.

    Cover & simmer for 30 mins. Season. Make mash.

    Transfer all to dish. bake for 30 mins until golden brown.
