  • Peach Filling
  • 3 1/2 pounds yellow peached, peeled
  • 1 cup light brown sugar
  • 1 tablespoon white balsamic vinegar
  • 1/2 teaspoon fresh ground pepper
  • 1/4 teaspoon kosher salt
  • 2 egg yolks
  • 1 tablespoon cream
