- 2 c. shredded, raw potatoes
- 1/4 c. chopped green onion
- 1/3 c. margarine
- 6 eggs
- 2 Tbsp. milk
- 1 c. diced ham or crumbled bacon, fully cooked
- salt and pepper to taste
Directions

1Cook potatoes and onion in the margarine in a large skillet on medium until tender.

2Beat eggs, milk, ham or bacon, salt and pepper.

3Pour over potatoes and onion in skillet.

4When egg begins to set, gently lift up around edges to allow raw egg to run under and cook.

5Cook until done.
