  • 2 c. shredded, raw potatoes
  • 1/4 c. chopped green onion
  • 1/3 c. margarine
  • 6 eggs
  • 2 Tbsp. milk
  • 1 c. diced ham or crumbled bacon, fully cooked
  • salt and pepper to taste

Directions

    Cook potatoes and onion in the margarine in a large skillet on medium until tender.

    Beat eggs, milk, ham or bacon, salt and pepper.

    Pour over potatoes and onion in skillet.

    When egg begins to set, gently lift up around edges to allow raw egg to run under and cook.

    Cook until done.
