  • 2 c. white corn
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 egg, beaten
  • 2 c. buttermilk
  • cooking oil (about 2 Tbsp.)

    Measure corn meal, salt and soda in bowl.

    Add beaten egg and buttermilk.

    Stir well.

    Heat cooking oil in cast-iron skillet. Pour small amount of oil into corn bread mixture; stir.

    Pour mixture into remaining oil in hot skillet.

    Bake in preheated 450° oven for about 20 minutes or until brown on top.
