- 2 c. white corn
- 1 tsp. salt
- 1 tsp. baking soda
- 1 egg, beaten
- 2 c. buttermilk
- cooking oil (about 2 Tbsp.)
Directions

1Measure corn meal, salt and soda in bowl.

2Add beaten egg and buttermilk.

3Stir well.

4Heat cooking oil in cast-iron skillet. Pour small amount of oil into corn bread mixture; stir.

5Pour mixture into remaining oil in hot skillet.

6Bake in preheated 450° oven for about 20 minutes or until brown on top.
