  • 1 2/3 c. cornmeal
  • 1 c. flour
  • 1/2 c. sugar
  • 1 Tbsp. baking powder
  • 1 tsp. salt
  • 1 1/2 c. half and half (milk)
  • 3/4 c. margarine
  • 2 eggs, beaten
  • 1/4 c. mayonnaise
  • 1/2 can creamed corn
  • 1/2 c. grated cheese

Directions

    Combine first 5 ingredients in a large bowl, mixing well. Combine remaining ingredients in a separate bowl and add to dry ingredients.

    Stir until moistened well.

    Pour into greased dish, 13 x 9 x 2-inch, or muffin pans.

    Bake at 425° for about 35 minutes or 20 minutes for muffins.
