  • 3 large all-purpose potatoes
  • 2 medium carrots
  • 1 tbsp. margarine or butter
  • 1 tbsp. vegetable oil
  • 1 medium onion
  • 1 large stalk celery
  • salt and pepper
  • 2 c. leftover turkey
  • 2 oz. Fontina or Swiss cheese
  • 1 tbsp. chopped fresh parsley leaves

    In 2-quart saucepan, place potatoes and water to cover; heat to boiling on high.

    Add carrots; reduce heat to low.

    Cover; simmer 5 minutes or until vegetables are almost fork-tender.

    Drain.

    Meanwhile, in heavy 12-inch skillet, heat margarine with oil on medium until hot.

    Add onion and celery; cook, stirring occasionally, 15 minutes or until lightly browned and tender.

    Increase heat to medium-high; add potatoes, carrots, 1/2 teaspoon salt, and 1/4 teaspoon freshly ground black pepper and cook 10 to 15 minutes or until browned, stirring occasionally.

    Stir in turkey and cook 1 minute.

    Sprinkle top with cheese; cover skillet and cook 1 minute or until cheese melts.
