Country Rye Bread

- 4 to 4 1/2 c. bread flour
- 2 pkg. active dry yeast
- 1 1/2 tsp. salt
- 2 Tbsp. vegetable oil
- 1 egg white, lightly beaten with 1 Tbsp. water
- 1/3 c. light brown sugar, packed
- 1 Tbsp. caraway seed
- 2 c. very warm water (120~)
- 2 c. rye flour
Directions

1In large bowl, combine 2 cups all-purpose flour or bread flour, sugar, undissolved yeast, caraway seed and salt.

2Gradually add water and oil; beat for 2 minutes on medium speed.

3Scrape bowl occasionally.

4Add 1/2 cup flour; beat 2 minutes on high, scraping bowl.

5Stir in rye flour and enough all-purpose flour to make soft dough.

6Knead on a floured surface until smooth and elastic (6 to 8 minutes).
