Ingredients
- 4 potatoes, pared and diced
- 2 carrots, pared and thin sliced
- 2 medium onions, sliced
- several lettuce leaves
- several celery leaves
- 1/8 tsp. basil
- 1 bay leaf
- 2 tsp. salt
- 1/4 tsp. pepper
- 3 1/2 c. water
- 2 c. light cream
- butter (for topping)
Directions

1In saucepan, place potatoes, carrots, onions, lettuce, celery, basil, bay leaf, salt and pepper.

2Cover with cold water.

3Bring to a boil; reduce heat and simmer, covered, for 1 hour.

4Pass mixture through food mill, strainer or puree in blender.

5Measure puree; add 1 cup light cream for every 3 cups puree.

6Heat thoroughly.

7To serve, top with small lump of butter.

8Serves 6 to 8.
