  • 3 pheasants, quartered
  • 3/4 c. flour
  • 1/4 c. cornmeal
  • 1 tsp. black or cayenne pepper
  • 1/2 c. butter
  • 1 c. water or chicken stock
  • 2 tsp. dehydrated minced onion
  • 1/2 lb. button mushrooms
  • 1/2 c. heavy cream
  • Hungarian paprika
  • 1 Tbsp. dried parsley

Directions

    Rinse pheasants with cold water and pat dry with paper towels. On a pie plate, combine flour, cornmeal, salt and pepper.

    Dredge meat in the flour mixture using fingertips to pat coating on the meat.

    Let stand 5 minutes.
