  • 4 or 5 medium yellow squash, sliced
  • 2 medium onions, thinly sliced
  • 2 green peppers, thinly sliced
  • 1 Tbsp. butter
  • 2 large tomatoes, sliced
  • 1 c. Parmesan cheese
  • 2 c. grated Mozzarella cheese
  • 1 c. mayonnaise

    Saute squash, onions and green peppers, one vegetable at a time in butter until tender.

    Layer tomatoes, squash, onions and green peppers in greased 2-quart casserole.

    Combine cheeses and mayonnaise in bowl, mixing well.

    Spread over vegetables.

    Bake at 350° for about 45 minutes or until browned and bubbly.
