Couscous Cakes

- 2 cup Cooked Couscous (I always use Roasted Garlic flavored)
- 2 Eggs, beaten lightly
- 1/4 cup parmesan cheese
- 1 tbsp Fresh basil, chopped
- 2 tbsp Flour
- 1/4 cup Olive Oil
Directions

1In a bowl, combine couscous, eggs, cheese and basil.

2Mix well with hands.

3Sprinkle flour over the top and mix again.

4Heat olive oil in medium skillet.

5Form couscous mixture into patties.

6(I use a 1/2 cup measuring cup, pushing the mix in lightly and then turning it out into the pan)

7Gently press the cakes down with a spatula to flatten slightly.

8Brown on both sides until golden, about 3 minutes per side.

9Drain cakes on paper towels to remove excess oil

10Serve.

11I always like to serve with thickly sliced tomatoes, but they are delicious all on their own.
