Couscous Salad

Ingredients

  • 2 c. water
  • 1 1/2 tsp. salt
  • 2 c. couscous (African pasta)
  • 1 small red onion, diced
  • 2 small cucumbers, seeded and diced
  • 3/4 c. currants, drained or raisins
  • 1/2 c. chopped flat leaf parsley

Directions

    Bring water to boil.

    Stir in salt and add couscous.

    Remove pan from heat and cover.

    Let stand 5 minutes.

    Transfer couscous to a large bowl and break up any clumps.

    Toss couscous with remaining ingredients.

    Add couscous dressing and mix well.
