Ingredients
- 2 c. water
- 1 1/2 tsp. salt
- 2 c. couscous (African pasta)
- 1 small red onion, diced
- 2 small cucumbers, seeded and diced
- 3/4 c. currants, drained or raisins
- 1/2 c. chopped flat leaf parsley
Directions

1Bring water to boil.

2Stir in salt and add couscous.

3Remove pan from heat and cover.

4Let stand 5 minutes.

5Transfer couscous to a large bowl and break up any clumps.

6Toss couscous with remaining ingredients.

7Add couscous dressing and mix well.
