Couscous Stuffed Tomatoes

Ingredients
- 1 handful curry leaves
- 8 3/4 ounces couscous
- 1 cup yogurt
- 4 tablespoons fresh mint leaves roughly chopped
- 6 green onions sliced
- 4 tablespoons olive oil
- 1 tablespoon parsley leaves fresh curly, finely chopped, plus extra sprigs to decorate
- 2 tablespoons white balsamic vinegar
- 4 tomatoes top sliced off, flesh scooped out
Directions

1Bring curry leaves and 1 cup water just to a boil. Remove from heat, add couscous and a pinch of salt. Set aside for 5 mins, until liquid is absorbed.

2Meanwhile, mix together yogurt, 2 tbsp mint and plenty of black pepper. Set aside.

3Mix green onions, olive oil, parsley, remaining mint and vinegar with couscous. Use to stuff tomatoes.

4Spoon yogurt mixture onto serving plates. Place tomatoes on top. Garnish with parsley sprigs.
