Ingredients

  • 2 c. uncooked pinto beans
  • 7 c. water
  • 2 lb. ham hock
  • 16 oz. can tomato paste
  • 1/2 c. chopped onion
  • 2 Tbsp. sugar
  • 4 oz. can chopped green chilies

Directions

    Soak beans in water overnight; do not pour off water.

    After soaking, add ham hock and cook for 1 hour.

    Take out ham and dice; return to beans.

    Add paste, onion, sugar and chilies.

    Simmer until done, about 3 or 4 hours.
