- 1 c. yellow self-rising cornmeal
- 2 eggs, well beaten
- 1 c. cream-style corn
- 1/2 c. bacon drippings
- 1 c. buttermilk
- 1/2 tsp. soda
- 1/2 tsp. salt
- 1 lb. ground beef, cooked and drained
- 1 small onion, chopped
- 1 or 2 jalapenos, chopped
- 1/2 lb. Cheddar cheese, grated
Directions

1Mix the first 7 ingredients and set aside.

2Grease skillet and sprinkle thin layer of meat in bottom.

3Pour half of batter in skillet.

4Sprinkle meat, onion, jalapeno peppers and cheese (one at a time) over batter.

5Pour remaining batter on top.

6Bake 45 minutes at 350°.
