  • 3/4 c. uncooked rice
  • 3 Tbsp. cooking fat/oil
  • 1 1/2 tsp. salt
  • 1 bay leaf
  • 3 whole cloves
  • 9 frankfurters, cut up
  • 1 1/2 c. onion, sliced (2 onions)
  • 1 (No. 2) can tomatoes
  • 4 Tbsp. green pepper, chopped (1/2 whole pepper)
  • 1 Tbsp. sugar

Directions

    Cook rice until tender.

    Drain.

    Meanwhile, cook onions in fat until tender.

    Add remaining ingredients.

    Simmer for 15 minutes; remove bay leaf and cloves.

    Add rice.

    Arrange 1/3 of mixture in greased 1 1/2-quart casserole.

    Cover with 3 cut up franks.

    Repeat layers until all ingredients are used.

    Bake at 325° for 1 hour.
