- 4 strips bacon, diced
- 1/2 small onion, chopped
- 1/2 small green bell pepper, chopped
- 1 tomato, seeded and diced
- 3 eggs, beaten
- salt and pepper
- 1 Tbsp. shredded cheese
- dash of Tabasco sauce or picante sauce
Directions

1Heat a medium-size skillet or omelet pan.

2Add the bacon and saute slowly until the fat is rendered.

3Turn up the heat and cook until the bacon begins to brown and crisp.

4Add the onion and bell pepper; cook to soften and finish off the bacon.

5Mix the tomato with the eggs, salt, pepper, cheese and picante sauce.

6Pour into pan.

7Cook until lightly browned on the underside.

8Place under a preheated broiler and cook the top quickly until brown and puffy. Cut

9into wedges and serve immediately.
