  • 6 medium potatoes
  • 2 c. sour cream
  • 1 onion, chopped
  • 1/2 c. melted butter
  • 1 c. milk
  • salt and pepper to taste
  • 8 oz. Longhorn cheese, shredded

Directions

    Cook unpeeled potatoes in water to cover in saucepan until tender; drain.

    Chill overnight.

    Peel and grate potatoes. Combine with next 6 ingredients and half the cheese in bowl; mix well.

    Spoon into 9 x 13-inch baking dish.

    Top with remaining cheese.

    Bake at 350° for 30 minutes.
