- 4 medium potatoes
- 1 tsp. salt
- 2 to 3 Tbsp. melted butter
- 2 to 3 Tbsp. chopped fresh herbs (such as parsley, chives, thyme or sage)
- 2 to 3 Tbsp. dried herbs (at choice)
- 4 Tbsp. grated Cheddar cheese
- 1 1/2 Tbsp. Parmesan cheese
Directions

1Peel the potatoes. Cut into thin slices but not all the way through.

2Put potatoes in baking dish and fan them slightly. Sprinkle with herbs and salt; dribble with butter.

3Bake potatoes at 425° for about 50 minutes.

4Sprinkle with the cheeses. Bake for another 10 to 15 minutes until lightly browned, cheeses are melted and potatoes are soft inside.
