- 1 medium roast
- 1/2 to 1 lb. pinto beans
- 1 can green chilies
- 4 to 6 c. water (enough to cover roast)
- 1 large chopped onion
- garlic to taste
- dried mustard to taste
- seasoning salt to taste
- pepper to taste
- chili peppers to taste
Directions

1Brown all sides of roast.

2Cover with water and add pinto beans (enough to fill in around roast).

3Add green chilies.

4Season to taste with dried mustard, seasoned salt, pepper and chili peppers. Cover and simmer 6 to 8 hours or all day.
