- 3 Tbsp. butter
- 1/4 c. chopped onion
- 1/3 c. chopped tomatoes
- 6 eggs, slightly beaten
- salt and pepper
- 8 oz. frozen imitation crab meat
- 3 oz. cream cheese, cubed
Directions

1Melt butter in ovenproof skillet. Add onion and tomatoes. Saute until onion is soft. Pour eggs into mixture; season. Cook until eggs have almost congealed. Stir in crab meat (cut in cubes) and cream cheese. Bake in 400° oven for about 10 minutes until cheese is melted and eggs are congealed.
