  • 3 Tbsp. butter
  • 1/4 c. chopped onion
  • 1/3 c. chopped tomatoes
  • 6 eggs, slightly beaten
  • salt and pepper
  • 8 oz. frozen imitation crab meat
  • 3 oz. cream cheese, cubed

Directions

    Melt butter in ovenproof skillet. Add onion and tomatoes. Saute until onion is soft. Pour eggs into mixture; season. Cook until eggs have almost congealed. Stir in crab meat (cut in cubes) and cream cheese. Bake in 400° oven for about 10 minutes until cheese is melted and eggs are congealed.
