- 2 Tbsp. butter
- 2 Tbsp. flour
- 1/4 tsp. ground thyme
- 1/8 tsp. pepper
- 3 large potatoes, cubed
- 1 (8 oz.) pkg. crab substitute
- 1 c. chopped celery
- 1 medium onion, coarsely chopped
Directions

1In 3-quart saucepan, melt butter over low heat.

2Add celery and onion.

3Cook until tender.

4Stir in flour, thyme and pepper. Gradually add milk.

5Stir constantly.

6Add potatoes.

7Bring to boil.

8Simmer 15 minutes or until potatoes are tender, stirring occasionally.

9Add crab substitute.

10Heat 5 minutes more.
