- 2 c. crabmeat
- 1 1/2 tsp. salt
- 1 tsp. dry mustard
- 2 tsp. Worcestershire sauce
- 1 egg yolk
- 1 Tbsp. mayonnaise
- 2 tsp. minced parsley
- flour (enough to coat)
- 1 egg, slightly beaten
- 2 Tbsp. water
- dry bread crumbs, sifted
- 1 Tbsp. butter
Directions

1Mix first seven ingredients together.

2Press mixture into firm cakes (8 to 10).

3Chill well.

4Before serving, dip cakes in flour, then in egg beaten with water, then dip into bread crumbs.

5Melt butter in frying pan.

6Saute cakes quickly over high heat until brown, turning once.
