Crab Casserole

Ingredients

  • 1 lb. or more fresh crab chunks (precooked)
  • 1/2 c. bread crumbs
  • 1/2 c. chopped onion
  • 1/2 c. chopped celery
  • 2 hard-cooked eggs, coarsely chopped
  • 2 Tbsp. lemon juice
  • 1 can cream of chicken soup (undiluted)
  • 1 c. mayonnaise
  • 1 c. shredded Cheddar cheese
  • 1 large bag potato chips

Directions

    Combine all of the ingredients (except cheese and potato chips), as for a salad.

    Spread in Pyrex cake baking dish.

    Shred Cheddar cheese and spread over crab mixture.

    Crush package of potato chips as finely as possible and use to top dish.

    Brown in 350° oven for 15 to 20 minutes.

    Serve with green salad and hot rolls.
