- 3 c. flaked crab meat or imitation crab meat
- 3 Tbsp. oil
- 2 Tbsp. minced onions
- 3 Tbsp. flour
- 2 c. skim milk
- 1/2 tsp. celery flakes
- 1/8 tsp. grated orange peel
- 1 Tbsp. parsley
- 2 slices toasted bread (for crumbs)
- 1 Tbsp. minced green pepper
- 1 minced pimento
- dash of Tabasco sauce
- 2 Tbsp. dry sherry
- 2 egg whites
- dash of pepper
Directions

1Saute onion in 3 tablespoons of oil until transparent.

2Add flour and cook, stirring for 1 minute.

3Pour in milk and cook until thickened.

4Add celery flakes, orange peel, parsley, green pepper, pimento and Tabasco.

5Remove from heat and add sherry. Add a little sauce to beaten egg whites, then add egg mixture to sauce slowly, stirring constantly.

6Add pepper and finely cut up crab meat.

7This will make 8 individual crab dishes or you can make 1 large casserole.

8Sprinkle crumbs on top.

9Bake at 350° for 15 to 20 minutes, uncovered.
