- 2 lb. fresh or canned crabmeat
- 1/4 c. green pepper, finely chopped
- 3 Tbsp. pimento, chopped
- 1/4 c. salad dressing
- 3 egg yolks
- 1 tsp. onion juice
- 1 Tbsp. onion, grated
- 1 tsp. salt
- 1/2 tsp. cayenne powder
- 1/2 tsp. paprika
- extra salad dressing (for top)
Directions

1Bone and flake the crabmeat.

2Combine with green pepper and pimento.

3Blend together the 1/4 cup salad dressing, egg yolks, onion juice, onion and seasonings.

4Add to the crabmeat mixture; toss until well mixed.

5Pack into 6 custard cups and unmold into casserole.

6Top each with 1 tablespoon of salad dressing; sprinkle with paprika.

7Bake in a 400° oven for 25 minutes, or until bubbly. Makes 6 servings.
