Crab Dip W/ Cilantro & Green Onions

Ingredients

  • 2 c. fresh crab meat or 2 tins (each 7 oz.)
  • 1 shallot, minced
  • 1 clove garlic, minced
  • 2 hard boiled eggs, finely chopped
  • 1 T. Dijon mustard
  • 1 T. lemon juice
  • 1 tsp horseradish
  • 1/2 c. mayo
  • 1/2 c. low fat yogurt
  • Fresh ground pepper
  • Dash hot pepper sauce
  • 1/2 c. chopped herbs (cilantro, green onions and parsley)
  • Paprika and sprig of cilantro to garnish

    Gently combine all ingredients, adding more mayo or yogurt if it's too thick. Serve in a dip bowl and garnish with paprika and/or a sprig of cilantro
