- 1 lb. fresh backfin crab meat
- 3 Tbsp. butter
- 1 Tbsp. flour
- 1/2 c. milk
- 1 tsp. Worcestershire sauce
- 2 slices white bread, crust removed and cubed
- 1/2 c. mayonnaise
- 1 Tbsp. lemon juice
- 1/2 tsp. salt
- few dashes freshly ground pepper
- paprika
Directions

1Remove cartilage from crab meat.

2In a medium saucepan, melt 1 tablespoon of the butter; mix in flour.

3Slowly add milk, stirring constantly to keep mixture smooth and free from lumps.

4Cook, stirring, over medium heat, until mixture comes to a boil and thickens.

5Mix in onion, Worcestershire sauce and bread cubes. Let cool.

6Fold in mayonnaise, lemon juice, salt and pepper.
