- 4 Tbsp. butter
- 2 c. crab meat, cooked
- 3 oz. dry sherry
- 1 c. cream
- pinch of cayenne pepper
- pinch of nutmeg
- salt to taste
- 3 egg yolks, beaten
Directions

1Melt butter in saucepan.

2Add crab meat and spices and simmer on slow heat for 3 minutes.

3Add 2 ounces of sherry and let it reduce by one-half, about 2 minutes, then add cream.

4Dilute egg yolks with 1 ounce sherry.

5Add and mix carefully.

6Cook and stir until thickened.

7Serve over rice.
