- 1 (6 oz.) pkg. frozen crabmeat
- 1 (9-inch) pie shell, unbaked
- 1/2 c. shredded Swiss cheese
- 1/8 tsp. leaf tarragon
- 1 c. half and half
- 1/3 c. minced onion
- 1 Tbsp. sherry
- 1/2 tsp. salt
- 3 eggs, slightly beaten
Directions

1Thaw.

2Drain thoroughly crab, coarsely chop.

3Bake pie shell at 425° for 10 minutes.

4Do not overbake.

5Sprinkle cheese on bottom of pie shell.

6Toss crab lightly with onion, sherry and spices. Layer over cheese.

7Beat eggs, half and half and pour over mixture. Bake at 325° for 45 to 50 minutes or until firm.

8Let stand 5 minutes before cutting into wedges.
