- pastry for 9-inch pie
- 1/2 c. mayo
- 2 Tbsp. flour
- 2 eggs, beaten
- 1/2 c. milk
- 1 (6 oz.) pkg. crabmeat, drained
- 1/2 lb. Swiss cheese, cut into 1/4-inch cubes
- 1/3 c. chopped green onions
Directions

1Line a 9-inch quiche pan with pastry.

2Place a piece of buttered foil, buttered side down, over pastry.

3Gently press into pastry shell.

4Cover foil with a layer of dried peas or beans. Bake at 400° for 10 minutes.

5Remove foil and peas.

6Prick shell and bake 3 to 5 minutes, until light brown.

7Cool.
