Crab Quiche

Ingredients
- 2 Tbsp. minced shallots or green onions
- 1 Tbsp. butter
- 1 c. crabmeat or imitation lobster
- 1 Tbsp. flour
- 1 pkg. spinach, cooked and well drained
- 1 1/2 c. shredded cheese (Swiss, Cheddar or Mozzarella)
- 3 eggs
- 1 c. half and half or milk
- 1/2 tsp. salt
- dash of pepper and nutmeg
- 1/2 tsp. dry mustard
- dried parsley
- 9-inch pastry shell
Directions

1Saute onions in butter 2 minutes.

2Mix in crab, flour and spinach. Sprinkle half of the cheese in bottom of pie shell. Spread in crab/spinach mixture. Top with remaining cheese.

3Beat eggs, cream, etc., until mixed but not frothy. Pour over pie. Bake at 350° for 1 hour.
