Crab Quiche

Ingredients

  • 2 Tbsp. minced shallots or green onions
  • 1 Tbsp. butter
  • 1 c. crabmeat or imitation lobster
  • 1 Tbsp. flour
  • 1 pkg. spinach, cooked and well drained
  • 1 1/2 c. shredded cheese (Swiss, Cheddar or Mozzarella)
  • 3 eggs
  • 1 c. half and half or milk
  • 1/2 tsp. salt
  • dash of pepper and nutmeg
  • 1/2 tsp. dry mustard
  • dried parsley
  • 9-inch pastry shell

Directions

    Saute onions in butter 2 minutes.

    Mix in crab, flour and spinach. Sprinkle half of the cheese in bottom of pie shell. Spread in crab/spinach mixture. Top with remaining cheese.

    Beat eggs, cream, etc., until mixed but not frothy. Pour over pie. Bake at 350° for 1 hour.
