Ingredients
- 4 eggs, well beaten
- 2 c. half and half
- 1/3 c. minced onion
- 1 tsp. salt
- 1/8 tsp. cayenne pepper
- 1 (6 oz.) pkg. frozen crabmeat, thawed
- 3/4 c. fresh mushrooms, sauteed in butter
- 1 c. shredded Mozzarella cheese
- 1 unbaked 10-inch pie shell
- chopped parsley
Directions

1Combine eggs, half and half, onion, salt and cayenne pepper. Blend until smooth.

2Drain crabmeat on paper towels until very dry.

3Sprinkle crab, mushrooms and cheese over bottom of pie shell.

4Pour in egg mixture and top with chopped parsley.

5Bake at 425° for 15 minutes.

6Reduce heat to 300° and bake for 30 minutes. Let stand 15 minutes before serving.

7Serves 8 to 10.
