- 1 stick or 1/2 pkg. pie crust mix
- 4 eggs
- 2 c. light cream
- 1/3 c. minced onion
- 1 tsp. salt
- 1/8 tsp. cayenne pepper
- 1 (7 1/2 oz.) can crabmeat, drained
- 1 c. shredded Swiss cheese
- snipped parsley
Directions

1Heat oven to 425°.

2Prepare pie crust per package directions. Beat eggs.

3Stir in cream, onion, salt and pepper.

4Pat crabmeat dry and sprinkle crabmeat and cheese into pie crust.

5Pour egg mixture over crabmeat and cheese.

6Sprinkle with parsley.

7Bake 15 minutes.

8Reduce heat to 300° and bake 30 minutes.

9Let quiche stand 10 minutes before cutting.
