Crab Quiche

Ingredients

  • 1 small onion, finely chopped
  • 1 1/2 c. sliced fresh mushrooms
  • 2 Tbsp. butter
  • 1 1/2 to 2 c. crabmeat
  • 4 eggs, beaten
  • 6 to 8 oz. shredded Mozzarella cheese
  • 2 green onions including tops, chopped
  • 2 Tbsp. olive oil
  • splash of dry white wine (1/4 to 1/2 c.)
  • salt, pepper and Tabasco to taste
  • 1/2 c. heavy cream

Directions

    Saute onion and mushrooms in olive oil and butter until onions are clear and mushrooms are soft.

    Add wine and crab meat; season with salt, pepper and Tabasco and simmer for 2 minutes.

    Spread evenly over bottom of quiche dish which has been sprayed with Pam. (I use a 10-inch Corning Ware dish.)

    Pour beaten eggs, mixed with cream evenly over crab mixture.

    Top with Mozzarella.

    Bake at 350° for 20 to 30 minutes until mixture is firm and cheese browns.
