  • 1 (9-inch) cooked pie shell
  • 1 (7 1/2 oz.) can crab meat, drained and squeezed dry
  • 1 c. grated cheese
  • 3 eggs, beaten
  • 1/8 tsp. cayenne pepper
  • 1/8 tsp. salt
  • 1/8 tsp. nutmeg
  • 1 c. whipping cream or half and half
  • 2 Tbsp. chopped pimento

    Spread crab into pie shell.

    Mix eggs, pepper, salt, nutmeg and cream in small bowl; stir thoroughly.

    Pour cream mixture over crab.

    Dot with pimento.

    Cook, uncovered, 8 to 10 minutes (turning twice) or until set.
