Crab Salad

Ingredients

  • 1 lb. crabmeat
  • 1 medium onion, shredded
  • 1 bunch red radishes, thinly sliced
  • 1/2 c. olive oil
  • 1/2 c. white vinegar
  • 1/2 c. cold water
  • 1/4 c. fresh lime juice
  • salt to taste
  • Louisiana hot sauce or ground cayenne pepper to taste

Directions

    In a small, flat bottomed glass dish, place layer of onion, then a layer of crabmeat, then a layer of radish.

    Repeat step. In a medium bowl, whisk together the oil, vinegar, water, lime juice, salt and hot sauce.

    Pour over the last layer.

    Cover and let marinate in the refrigerator for at least 2 hours.

    Serve on a bed of lettuce with cracked pepper crackers.
