- 2 hard-boiled eggs
- 1 Tbsp. butter
- grated rind of 1 lemon
- 1 Tbsp. flour
- 1 qt. milk
- 1/2 lb. crabmeat
- 1/2 c. cream
- 3/4 c. cooking sherry
- pepper to taste
Directions

1Mash the eggs to a paste with a fork, then mix with the butter, lemon rind and flour.

2Bring the milk to a boil in a saucepan, then add gradually, stirring constantly, to the paste. Return to saucepan.

3Add the crabmeat and simmer for 3 minutes. stirring constantly.

4Add the cream and sherry and bring to a boil.

5Season with pepper and serve.
